This delicious sauce can be enjoyed with a range of food including yam, bread, pasta, and rice. The cooking process is quite similar to that of bolognese sauce but corned beef sauce is the popular alternative Nigerians are familiar with.
1 can corned beef
4 pcs big tomatoes
2 pcs tatase
4 pcs rodo
2 pcs bouillon cube
1 pc onion
1 teaspoon curry powder
1 teaspoon thyme
1 teaspoon parsley flakes
4 tbsp vegetable oil
1 teaspoon garlic powder
2 tbsp tomato paste
Blend the tomatoes, tatashe, rodo and 1/2 onion with as little water as possible. Set aside.
Pour oil into a saucepan and put on medium heat. Chop the remaining 1/2 onion into the oil. Allow to fry for about 4 mins.
Add in the blended pepper and allow to fry for about 10 mins.
Add in the tomato puree and season with stock cube, thyme, garlic powder, curry, and parsley. Allow to simmer for about 5 mins.
Turn up the heat, add the corned beef and stir until well combined with stew (do not over mix). Cook for another 5 mins.
Serve with yam or bread.
