This is an anytime omelette! A quick grab for a tight schedule and perfect breakfast for vegetarians. It is best enjoyed when served hot and goes perfectly well with a cup of coffee. Trying this yourself is a sure way to savor the goodness.
Peel the avocado and remove seed, chop then set aside. Also chop the pepper to fill ¼ cup, shred cheese to fill ½ cup, slice the onions to fill 1 tablespoon then set aside.
Whisk the eggs in a bowl, add 3 tablespoons of milk and whisk well.
Place a nonstick frying pan over medium low heat, pour the whisked egg mixture and allow to cook until top is set.
Add the shredded cheese and onions and allow to cook for about 2 minutes or until the cheese melts. Top with 1 tablespoon of chopped pepper and the avocado.
Fold over and serve immediately.
