Cupcakes are always a good idea…particularly with cream cheese frosting. Super yum!! With this recipe those abandoned bananas on the counter become the star of the moment. Who said cupcakes are only for special occasions? Whip some up today!
Ingredients:

Method:
Preheat the oven to 350°F. Line a 12-cup muffin pan with baking paper cups.
Mix 1½ cup flour, baking powder, ½ teaspoon baking soda, ¾ cup sugar and salt in a bowl. Set aside.
In another bowl mix ½ cup butter (melted), eggs, ½ teaspoon vanilla essence and mashed bananas (ideally overripe). Make a well in the bowl with the dry ingredients and pour in the wet ingredients. Combine but do not over mix.
Pour the batter into the baking cups filling them up about ⅔ way, Allow to bake for about 25 minutes. To check if it is done, insert a toothpick and it should come out clean. If not leave to bake for a few more minutes.
To make the cream cheese frosting – Add cream cheese, butter and remaining vanilla essence into a blender and combine until smooth. Mix in the icing sugar slowly until well combined.
Allow the cupcakes cool for about 5 minutes before transferring to a wire rack. After cooling completely, pour the frosting into a piping bag and frost the cupcakes.
