This hearty and spicy stew from Ghana is scrumptious. Don’t let the number of pepper scare you off, it is actually milder than anticipated. If you like your beef stew hot, feel free to add as much pepper as your taste buds can allow. Give this stew a go!
Wash the beef and cut into cubes. Dice the onions, tomatoes, green chilli and tatase and set aside.Also, chop the spinach and mince the garlic and set aside.
Heat 1 tablespoon of oil in a sauce pan over medium heat. Brown the beef in the oil for few minutes then transfer into a bowl.
Heat the remaining oil in the same pan and saute the onions and garlic until the onions begin to turn golden. Add the tomatoes and cook for few minutes, stirring occasionally. Add water if necessary to prevent the mixture from sticking to the bottom of the pan.
Add the ginger, green chilli and tatase and cook for few minutes, stirring occasionally. Add 1 cup of water and the seasoning cubes, alternatively add 1 cup of beef stock.
Add the beef and stir. Adjust seasoning. Cover the sauce pan, reduce the heat and allow to cook for about an hour. Add the spinach and cook for about 10 minutes.
Serve with rice or pasta.
