When we talk about classic cakes, this is definitely in the lead. With its buttery rich taste, it will have you coming back for seconds. This is a popular cake for baking newbies, simple yet scrumptious. Goes great with a cup of tea or coffee.
Ingredients:
200 grams plain flour
250 grams unsalted butter
190 grams sugar
2 tbsps baking powder
3 pcs eggs
4 tbsps condensed milk
1 teaspoon salt
Method:
Preheat the oven to 350°F. Lightly grease an 8 inch (20 cm) square pan and line with parchment paper.
Mix plain flour and baking powder in a bowl and then sieve. Add in salt and mix. Set aside.
Mix butter (room temperature) and sugar on low speed using an electric mixer. Increase the speed and whisk until you get a pale yellow colour.
Whisk in the eggs one at time. Every time you add one in, mix well before adding another. Add in the vanilla essence and mix until creamy.
Add in the flour in 3 batches, making sure to mix well per batch. Pour in the milk one spoon at a time as you mix.
Pour the batter into the pan and make sure to level. Allow to bake for about 50 minutes or until golden brown. To check if it is done, insert a toothpick and it should come out clean.
Remove from oven and allow to cool for about 10 minutes on a wire rack, then turn it out to continue cooling.
Best served warm.
