Eggs are not just fantastic, they are affordable and can be put into great use. Dashing out early? This cheese omelette is quick and tasty. And having it with wholemeal bread will keep you fuller for long. This is all you need in a breakfast!
Firstly crack the eggs into a mixing bowl, the salt and black pepper and whisk until fully combined.
Pour the mixture into heated ½ tablespoon of olive oil in a non-stick frying pan. Tilt the pan to allow the eggs spread out. Sprinkle over with cheese when the omelette begins to form but has raw eggs on top.
Gently ease around the edges of the omelette then fold it over in half. Allow to turn golden brown, then slide onto a plate.
Delicious with diced tomatoes.
