Bored of plain corned beef or bolognese sauce? Chilli Con Carne (aka Chilli) is an alternative way to have your minced meat sauce. This recipe calls for kidney beans but you can equally add in vegetables of your choice. I personally go for sweetcorn, yum!
Firstly dice 2 garlic cloves, rodo and onion finely. Set aside.
Put a sauce pan over low heat and add in olive oil. Fry the onions for about 6 minutes or until softened.
Turn the heat up and now add in the minced meat to cook for about 8 minutes. Keep stirring until meat is no longer pink. Add the garlic, all the spices, salt and black pepper. Remember to stir occasionally so they do not burn. Add the plum tomatoes, tomato purée and stock cubes. Use the spoon to break down the tomatoes and stir.
Cover sauce pan and leave sauce to simmer for about 45 minutes. Add in the kidney beans (drain out the water from the can first) and cook for another 10 minutes.
Serve hot with rice or baked potatoes.
