If you’ve always seen people taking tapioca by the roadside then you would be wondering what makes it special. Our recipe is totally off the hook to start with. With creamy coconut milk and a generous garnish of fruits, your morning can’t be any better.
Soak the tapioca in the water for about 30 minutes and do not drain after soaking.
Add the coconut milk and salt cook over medium heat until the mixture comes to a gentle boil while stirring occasionally. Simmer over very low heat for about 10-15 minutes and stir occasionally until the mixture is thick.
Remove from heat and allow to cool for 15 minutes before stirring in the honey and vanilla essence.
Serve warm or chilled with the banana (peeled and diced), kiwi (peeled and chopped) and blueberries. Add nuts and extra coconut milk to taste.
