You can probably tell where this drink gets its name from…how cool is it?! The ginger beer and rum float so gallantly at the top while the lime juice gives that tangy taste as it flows from the bottom. Watch light and dark work in perfect harmony.
2 ounces rum
4 tbsps sugar
5 ounces ginger beer
1 pc lime
If you don’t already have simple syrup prepare this by mixing 1 part water and 1 part sugar in a saucepan over medium heat. Keep stirring until the sugar dissolves. Let it simmer for about 5 minutes but stir every now and then. Allow to cool and refrigerate for about 4 hours.
Fill up a glass with ice. First cut the lime in half and squeeze in ½ ounce fresh-squeezed lime juice and ½ ounce simple syrup, give it a stir. Then pour in the ginger beer and finally the rum.
Garnish with a wedge of lime.
