Imagine those sweaty hot days in Lagos that are just so dehydrating and all you need is a drink that hits the right spot. Well this recipe is us telling you to look no further. Try this ginger infused cocktail now and feel refreshed in no time.
1 pc peach
The simple syrup has to be prepared first. Mix ½ cup water, ½ ginger (peeled and crushed) and ½ cup sugar in a saucepan over medium heat. Keep stirring until the sugar dissolves. Let it simmer for about 5 minutes but stir every now and then. Sieve the syrup to remove the ginger shaft. Allow syrup to cool and refrigerate for about 4 hours.
Cut the peach and remove core. Cut into wedges and put about to 2 per glass. Smash the peaches with a spoon to release thee juice. Add in 2 tablespoons of syrup (rest can be used to prepare other cocktails) and the ice cubes. Top off with soda water.
Garnish with mint leaves.
