Who said gingernut biscuits have to be store bought? You get to make this flavour filled biscuits in the comfort of your home, how exciting! With this recipe, snack time is covered and you can make it a fun activity with the kids over the weekend.
1 teaspoon baking soda
If you don’t already have simple syrup prepare this by mixing 1 part water and 1 part sugar in a saucepan over medium heat. Keep stirring until the sugar dissolves. Let it simmer for about 5 minutes but stir every now and then. Allow to cool and refrigerate for about 4 hours.
Cut the lemon into wedges and muddle one wedge in a cocktail shaker. Add in ¾ ounce simple syrup and ice cubes. Shake well.
Strain into a glass filled with ice. Garnish with a lemon wheel and mint.
