Pancakes are one of my personal favourites and I will have it any which way, particularly bite sized. You get to take them very easily with you, if you do not want to sit at home to have breakfast. Their mini muffin resemblance does the trick!
1 pc chocolate chips/dark chocolate bar
Preheat oven to 375°F. Grease a mini muffin baking pan. Set aside.
Mix 1¼ cup flour, baking powder, sugar and ¼ teaspoon salt in a bowl. In another bowl mix the milk, eggs and vanilla essence.
Make a well in the bowl with the dry ingredients and pour in the wet ingredients and mix until smooth.
Fold in chocolate chips or alternatively chop a plain chocolate bar into bits and add to the batter (optional).
Spoon batter into the muffin cups, about ¾ way. Bake for about 10 minutes. To check if done insert a toothpick and it should come out clean.
Serve with fruits and syrup.
