Sparkling wine gets boring over time but can be spruced up with homemade peach puree. Whip this up for your next Sunday brunch with friends or family. Prosecco can be used as an alternative to achieve great tasting bellini, the key ingredient is the fizz!
Cut, remove seeds and chop 3 peaches. Squeeze the juice from the lemon to fill 1 tablespoon. Add the lemon juice, peaches, sugar and a little water to a sauce pan and heat on medium. Do this until you achieve a syrup like thick texture.
Blend the puree until smooth and allow to cool. Then put in the fridge for a while.
To serve, pour 2 tablespoons of puree into the champagne flute and top off with chilled sparkling wine (or prosecco).
Garnish each glass with a peach slice.
