Firstly, chop the onion, tomatoes and pepper. Also, grind the groundnut to fill 1 cup.
Bring 2 cup of water to boil in a medium pot and add the onions, chopped tomato, tomato puree, pepper, crayfish, seasoning cube ans salt.
Wash and peel the plantain (preferably half ripe plantain) then cut into desired size. Add the plantain and shrimps into the pot and cook for about 10-15 minutes or until the plantain is soft. This depends on the size of the plantain chunk.
Dissolve the groundnut in little water and add it into the pot. Add the oil and stir. Adjust the seasoning if necessary then lower the heat and simmer for about 5 minutes. Add water if necessary to improve consistency. If you are using aubergine, chop and add at this stage.
