Bored of boiled and fried yam? Roast yam is the best bargain! It is a gathering of spice in a plate.This meal will definitely awaken your taste buds and will leave you asking for more. Enjoy this as a main vegetable dish or as a side dish with grilled meat.
Firstly peel the yam and cut into pieces. Wash the yam and put in a pot. Add water, ¼ teaspoon of curry powder and salt to the pot. Steam for about 10 minutes. Drain off the water and set the cooked yam aside.
While cooking the yam, grate the fresh ginger to fill one teaspoon, chop one green pepper and the curry leaves. Pour coconut oil into a frying pan, add ½ teaspoon of mustard seeds, one tablespoon of urid dal and ½ teaspoon of cumin seeds. Stir continuously until the urid dal turn brown.
Add one pinch of hing, curry leaves, chopped green chilli and one teaspoon of grated fresh ginger. Fry for about a minute and add the cooked yam, one teaspoon of garam masala and salt to taste. Mix properly and all to fry for few minutes.
Garnish with fresh parsley.
