This salmon recipe is off course fork-tender and juicy! It is a good reward for your taste buds with very short cook time. It is handy in the foil packets and pretty on a plate. Salmon lovers would stick to this for a very long time. Give it a go now!
You will need to cut the salmon fillets into 4 equal pieces of about 170 g each., wash then set aside. Cut 2 lemons into 8 slices, squeeze the juice in the remaining lemon to fill ¼ cup. Set aside.
Brush the salmon fillets with olive oil and season with ½ teaspoon of black pepper, ½ teaspoon of salt and rosemary.
Place each of the seasoned salmon on a piece of foil large enough to fold over and seal. Top each salmon with 2 pieces of lemon slices, 1 tablespoon of lemon juice, 2 tablespoon of wine and 1 tablespoon of capers (optional).
Place a grill pan over medium heat. Place the foil packets on a the grill and cook for 10 minutes for a 1-inch thick piece of salmon.
Serve in the foil packets or on a large flat plate and garnish as your heart desires!
