Yesterday was Nelson Mandela International Day and guess what we whipped up? One of his favorites, samp and beans. Easy to prepare and has that natural flavour of beans and corn kernels. This South African dish is a good way to know what meal time was for Madiba.
500 g /samp
800 g (beans oloyin)
Firstly crush the corn kernels to make samp. Pour the beans and samp in a pot, cover with water and bring to boil over medium heat. Reduce the heat and cook for about 2 hours or until soft. Do not stir or it will become excessively starchy.
Keep checking to avoid the mixture from sticking to the bottom of the water and add water if necessary. About 1 hour into the cooking, add the seasoning cubes. Drain off the water when the mixture has cooked through.
Season with pepper and salt to taste and stir in the butter.
