This is one of my childhood favourites, particularly during the Christmas holiday. You probably remember the rectangle shaped ones, so yummy! Forget venturing out to buy these cookies from the supermarket, you can make them in the comfort of your home!
1 cup icing
Preheat the oven to 325°F. Line your baking sheets with parchment paper.
In a bowl, mix flour and ¾ teaspoon salt. Set aside. Whisk butter and sugar until fluffy and pale. Add in vanilla essence and the dry items. Mix until well combined but do not over mix. Mixture should have a soft dough like texture.
Mold the dough into 2 balls, wrap with cling film and keep in the refrigerator for about 1 hour.
Mow over the dough (on a floured surface) with a rolling pin until it is about ¼ inch thick. Cut out shapes using a circular cookie cutter or any one of your choice. Place the dough on the pan and keep in the fridge for about 30 minutes.
Allow to bake for about 15 minutes or until a pale-golden brown. Transfer to a wire reach and allow to cool completely.
You can garnish with sugar if you want. Serve cookies with a cup of tea.
