We all love to savour the taste of banana bread, right? But with the addition of fresh strawberries, this bread is beyond description. It is the definition of a new level of deliciousness. This fruit-rich bread is suitable for breakfast and snack time.
Preheat the oven to 375 degrees F. Spray two 9×5 loaf pan with a nonstick spray and set aside.
Place the butter and sugar together in a large bowl. Cream the mixture together using an electric mixer until light and fluffy. Whisk the eggs in a small bowl and beat into the butter and sugar mixture.
Peel and mash the bananas, then add into the butter mix and mix well until well combined.
Sift all the flour, baking soda and salt. Slowly add the dry ingredients to the butter and sugar mixture slowly and mix thoroughly but do not overmix . Fold in the strawberries (chopped and coated in 1 tablespoon of flour).
Pour the batter into the already prepared pans and bake for about 15 minutes. Reduce the heat to 350 degrees F. Bake for 30 minutes or until the edges are slightly brown or a skewer inserted at the centre comes out clean
Allow to cool before removing from the pans.
