Who said kids are the only ones allowed to have fun. These ice pops are rate 18! the adults have also come out to play. This recipe is great for those pool parties or beach days you have planned for the summer. Make as boozy as your heart desires.
The simple syrup has to be prepared first. Mix 1/2 cup water and 1/2 cup sugar in a saucepan over medium heat. Keep stirring until the sugar dissolves.
Let it simmer for about 5 minutes but stir every now and then. Allow to cool and refrigerate for about 4 hours. Freeze the strawberries.
Combine 3/4 cup rum, 5 tablespoons lemon juice, 5 teaspoons simple syrup (rest can be used to prepare other cocktails), frozen strawberries and 1 cup ice in blender. Blend until frothy.
Poor the daiquiri into popsicle molds or shot cups and insert popsicle sticks. Put in the freezer until it sets, should take about 8 hours or overnight. Serve frozen.
