Preheat the oven to 350 degrees F. Spray a 9×13 inch baking pan with nonstick spray and set aside.
Combine the salt, chilli powder, cumin, ½ teaspoon of pepper and cinnamon in a small bowl. Rub the spice on all parts of the pork.
Brown the pork for about 4-5 minutes in the oil over medium heat. Transfer the pork to the prepared baking sheet. Mix the honey, garlic (minced) and Tabasco sauce in a small bowl and pour over the pork.
Bake the pork for about 20 minutes or until the internal temperature of the oven reaches 140 degrees.
Remove the pork from oven and cover loosely with foil.
Let it sit for about 5-10 minutes, then serve.
