This Tomato Soup is easy to cook and requires just three ingredients. We chose carrot over sugar because of its health benefits. Suitable for lunch and dinner and a good way to cut down fat and oil intake. Serve hot with bread, rice and pasta.
Chop and blend the carrot with little water. Drain the carrot juice to fill ½ cup.
Combine the carrot juice, 1½ kilogramms tomato and garlic in a blender and process for a minute. Transfer the blended mixture in a pot and add salt and pepper. Cook for about 30 minutes.
Serve and top with basil, cheese, sour cream or whatever you prefer.
