Quinoa has been all over the internet lately and we thought to impress you with this recipe. Light, fluffy and so scrumptious I must say. To enjoy this meal, wash the quinoa very well and avoid adding too much water so that it doesn’t turn out soggy.
You will need to rinse the quinoa until the water runs clear then drain and set aside.
Heat the oil in a medium-sized saucepan and saute the onions (chopped), garlic (minced), cumin and mustard seed for about 2 minutes. Add the quinoa and half of the turmeric and stir.
Add the water and bring to boil. Reduce the heat, add salt to taste and cook for about 12 minutes. Add the green peas. If it appears too dry, add about 1-2 tablespoons of water. Cover and continue to cook for about 4 minutes or until the water is absorbed.
Add the tomatoes (halved) and lemon juice and stir to mix all the ingredients.
