Running away from muffins because you think they are super unhealthy?… run no more! This recipe is especially for you. You get to incorporate fibre filled oats and fresh apples into this filling muffin. Start your day energised with this muffin!
2 cups plain
4 tbsps brown
Preheat oven to 375°F. Grease or line a 12-cup muffin pan with baking cups. Peel and chop the apple finely.
Mix 1½ cups flour, ¾ cup oats, sugar, 1½ teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon salt and the spices. Set aside. In another bowl combine the applesauce, milk, vanilla essence, eggs and apple.
Make a well in the bowl with the dry ingredients and pour in the wet ingredients. Mix until just combined, do not over mix.
Pour the batter into the baking cups, about ½ way (this is because the batter rises). Allow to bake for about 20 minutes. To check if it is done, insert a toothpick and it should come out clean.
Allow to cool for about 5 minutes before transferring to a wire rack. Garnish with oats.
