Firstly shell and devein the prawns, leaving tails on. Sprinkle with salt and lemon juice then set aside.
Sift the flour into a large bowl. add the baking powder, ¼ teaspoon of pepper and ¼ teaspoon of salt to the bowl. In another bowl, combine lightly whisk the eggs and the water (the water should be ice cold)
Gradually pour the egg and water mixture into the bowl of flour and mix gently to form a paste.
Put the oil in a deep pan to a depth of 3 inches and heat to 375 degrees F. Holding the prawns by the tail, deep into the batter and fry few pieces at a time until golden brown or for about 3-4 minutes.
Drain on paper towel.
Serve with ketchup or sweet and sour sauce.
