Do not think that this is cauliflower curried rice, no it’s not. This is cauliflower sauce – a very rare delish. It is easy, tasty and super dope for vegetarians in the house. Eat something different and amazingly healthy this weekend by trying this out!

Method
Firstly, cut the cauliflower into florets to fill 5 cups. Slice the onions, tomatoes and carrots and set aside. Also, chop the basil leaves to fill ½ cup. Set aside.
Heat the oil and butter in a large skillet with tall sides over medium heat. Once the butter melts, add curry powder and ½ teaspoon of ginger powder. Add the cauliflower, carrot and stir. Cook for about 10 minutes while starring occasionally.
Add the tomatoes, coconut milk, basil and water. Bring to simmer. Simmer, stirring occasionally for about 5 minutes. Add salt and pepper to taste.
Reduce the heat, stir in the peas and cook for about 20-25 minutes. Keep warm until ready to serve.
Serve over rice or pasta.
