You don’t have to spend the whole day in the kitchen to get a satisfying taste off your meal. With sweet corn, bacon and spring onions, you are just good to go! This is one meal that you can count on anytime any day. Serve over cooked rice. I love this!
Dice the bacon and spring onions. Set aside. Drain the sweet corn and set also set aside.
Fry the bacon in a large saucepan over medium heat until brown. Remove most of the grease in the pan carefully. Add the corn and continue to cook until the corn is brown, stirring occasionally.
Add the pepper and salt then stir. Taste and readjust the seasoning if necessary.
Turn off the heat and stir in the spring onions.
Serve over cooked rice.
