This recipe is Back-to-School-inspired. We know how tedious it is for mums to prepare healthy breakfast every morning for the kids. This yummy bite is made with just 4 ingredients and doesn’t take the whole day to cook. Serve this with food drinks.
Cook the sweet potatoes, allow to cool then peel.
In a small bowl, smash the sweet potato and banana together. Add the eggs, peanut butter and cinnamon, and mix thoroughly. Stir in chocolate chips, chia seeds, fruits etc.at this stage if you are using any.
Scoop into greased mini muffin tins and bake at 375 degrees F for about 18 minutes.
